Coconut Seafood Gumbo

Fish (Snapper or Tilapia) |

Walkerswood Coconut Rundown Sauce |

Okra, diced |
| 3 |
Plum tomatoes, skinned & chopped |
| 1 small |
Onion, chopped |
| 1 sprig |
Fresh thyme |
| 2 clove |
Garlic |
| 1 cup |
Fish stock (can substitute water) |

Salt & Pepper |
| 2 tbs. |
Vegetable oil |
Method:
- Heat oil in a saucepan and saute onion, thyme, and garlic.
- Add shrimp and fish then add okra and tomatoes, Saute for 5 minutes.
- Add stock and bring to boil. simmer and allow to reduce slightly.
- Pour in Walkerswood Coconut Rundown Sauce, adjust seasonings to taste and simmer for 1 more minute. (If seafood is pre-cooked it can be added just before the rundown sauce so as not to be overcooked).
- Serves 4
